• 1 cup water
• 1 cup raisins
• 1 cinnamon stick
• 4 cups rolled oats
• 1 cup whole wheat pastry flour
• 2/3 cup sunflower seeds
• 1/2 cup dried coconut ( optional)
• 1/4 teaspoon salt
• 1/3 cup corn oil
• 1/3 cup barley malt or honey
• 1 teaspoon vanilla Juice and grated rind of one lemon
• 2 eggs
Preheat oven to 375 F Bring the water to a boil in a small pan; add the raisins and cinnamon stick and simmer covered while the rest of the ingredients are put together. In one bowl, mix the remaining ingredients beating well with a wire whisk until thoroughly blended. Remove the cinnamon stick from raisins, then puree the raisins and cooking water in blender. (If raisins are still hot, loosen the blender top to allow air into the container.) Blend the raisins into the oats mixture; allow to stand while you oil two baking sheets. Add the oil mixture to the oats and raisins; mix well. Place flattened tablespoons of batter on cookie sheets. Bake for 15 minutes, then turn cookies over and bake anther 10 minutes or until lightly browned.
